It sounds like Linux is indeed what you want. There is a lot of work
going on to make Linux work better for controls, embedded systems, etc.
And most importantly, Linux _is_ completely comprehensible -- not easy,
admittedly, but at least there are no secrets.

OTOH, you cannot simply expect people to tell you what you want to know.
You have to ask, because nobody knows what to say otherwise. And sometimes
the answers you will get (and you will get answers) will raise even more
questions. You will have to persevere to get what you want, and, yes, you
will have to dig some yourself.
