dd is good for creating an exact copy of the data image exactly as on
the CD.
However, there are some caveats when working with multi-track and multi
session cds, in that it usually will only access one session and one track.

To copy a data cd that way simply use dd to copy the cd to an iso image
and then use cdrecord or xcdroast to burn the copy onto a new cd.

To rip music cds and to convert them to mp3 format I use grip with
cdda2wav to create the wav file and then notlame to encode it to mp3.
grip makes it seamless and controls the sequencing of both cdda2wav
(or the built in cdparanoia) and the notlame encoder with no need for
command line manual conversion.
