wish i had more time, 'cause i'd do a session on them ... i currently
use one of my linux computers running fedora core 1 (will soon be
running slack9, but needed something quick 'n' simple and was wanting to
see what all the hype was about) to run my home entertainment system ...
right now, i can basically play any format of video/audio that i've ever
run into (including DVD, DVD-A, CD, mp3, DivX, etc) and have sound going
out my SBLive! via a Hoontech DB-III Digital I/O card to my surround
sound system's fibre-in (AC3-passthrough enabled, so i get full Dolby
Digital sound!) ... used to have a dual-monitor setup w/ a TV as the
secondary display, but moved out of my roommate's place, so i no longer
have a TV and have to watch my 17" CRT from across the room :(

don't know what all you want covered, tho' ...

if you want an idea of what apps are out there, definately check out
planet ccrma ... has TONS of awesome apps (from a/v playback to a/v
capture/edit) and various versions of the kernel patched for multimedia
support and other speed optimizations ... currently geared towards
RPM-based systems (however, they do have links to all the source if
you'd rather use debian or another non-RPM distro) ... also have an
apt-rpm repository, so getting all the latest a/v apps is as simple as a
few commands (or a few clicks in synaptic) ...
