Ah, I see your confusion here.  Compiling the kernel only changes which
'drivers' are available for your hardware. All of the newer distributions use a
modular kernel, which one of two ways a kernel can be constructed.  Modular
kernels allow drivers to be loaded and unloaded as needed, rather than being
fixed in ram.  This is either done manually, or automatically by the kernel
daemon.

As for what software is installed, you just need to call up the package manager
and deselect whatever you don't want installed. I'm not really familiar with
RedHat, but there should be an option to 'remove unwanted packages'. The package
manager should have a description of what each package does so you can decide if
you really want/need it.

You may also find some programs running that you don't recognize.  Try running
'man <program name> as root and see if it identifies what the program does.
