With both of those requirements, I'm not sure if you'll find
something that meets them exactly. The best I could see happening
there is that you find a generic (probably syslog) analyzer that
has "plug-in" capability, such that you can add the modules to
analyze whatever you're logging.
Otherwise, I know of WebTrends (.com) that analyzes most common
web server log files.
