What you're asking about are Window Managers, probably. "X" is the same,
regarldess of which Window Manager (WM) you use. Most people with Linux
use XFree86, which is the name of the actual X "server".
Then you can choose which Window Manager you want to use. The Window
Manager is what gives you the "feel"--it dictates what menus will look
like, color schemes, etc.
I use Window Maker, and it's a fairly popular one.
KDE and Gnome are both popular, and are actually more than Window
Managers--they also include "toolkits" which makes it easier for certian
types of programs to interact with each other--allowing for drag'n'drop
types of applications, etc, amoung other things.
Enlightenment is also popular.
FVWM, FVWM2, and FVWM95 are also popular.
AfterStep is also.
Try to avoid OLVWM, TWM, and GWM. These are some pretty basic,
bare-bones window managers. There are other nasty ones, too, I'm sure,
but these are the ones I'm aware of. :-)
