I would, but at this point we aren't doing too much around town.  Part
of that is my fault as I have a radio on the bench that I need to finish
converting to 9600 bps and then get it over to the amateur that wants
it.  We're not doing too much different with Linux than with any other
TCP/IP connection, just slower :)  I wish I had access to an RF engineer
who'd like to build things...like an RF modem capable of > 10 Mbps @ 24
GHz...but then I'm dreaming.

Perhaps the most interesting niche that ham radio uses data
communication is an application called Amateur Packet Reporting System
(APRS).  This was originally a DOS program which implemented a  protocol
designed so that stations would periodically transmit their latitude and
longitude coordinates and any receiving station running the software
would display their location on a map on screen.  This has gotten
popular in many areas of the country with people using a GPS receiver
with this system while they are mobile so others can track them.  It has
found a few practical applications, such as tracking rally cars, a relay
race, and keeping track of amateur radio based balloons after they are
launched until the payload is recovered.

Otherwise I'd have little to demo that'd be linux specific.
