I don't remember WindowMaker being on RH 5.1, but Gnome's definitely there,
and I think KDE is too. Those could give you a nice look & feel.
I don't remember seeing it (but I wasn't looking), but it'd really surprise
me if Enlightenment isn't on the RH distro, since the dude that wrote it
works in their advanced development lab. I'm pretty sure I saw an RPM for
AfterStep on there too.
(I have to keep putting these caveats in 'cause I'm not running RedHat
myself right now, but I set a RH 5.1 system up for a friend a couple of
months ago)
