How about hardware?  Determining what hardware will work in Linux (I have
an XYZ brand card with an ABC chipset, will it work?) and how to configure
Linux to work with various hardware (TV cards, CD-R's, 3d Video cards,
etc, etc...)

Or perhaps disk drives & filesystems... How to add a disk drive to your
system, how to run fdisk, how to format it... How to access other
filesystems in Linux (FAT, VFAT, FAT32, NTFS, HPFS, HFS, etc, etc..).  How
to mount CD's, how to mount floppies, how to mount disk images, how to
create disk images, what RAID is (perhaps how to do it).  How to get
better performance out of your drives (Putting IDE's on different
channels for example), etc, etc...

A couple brainstorms for you there.  Do with them what you will. :-)
