i always liked

'tar zcvf target.tar.gz source/'

for tar-ing /compressing and

'tar zxvf foobar.tar.gz'

for decompressing / untar-ing...  just remember x=eXpand and c=Create
(or Compress)...  that's what i do! : ^ )
