RealMedia server is available for Linux--for a price.

Windows Media server is free--for Windows NT.

You could probably do some sort of streaming MP3s.  I believe both server
and client are available for Linux for free, but I'm unsure of names for
either.

Does xmms work as an MP3 streaming client?
