I would recommend postfix highly.  It is much better designed for this
type of work.  Getting sendmail to do filtering is very possible but you
have to contort it into shapes that you don't want to see your MTA in to
make it happen.

postfix is built around pipes.  An incoming email always goes through
several different pipes in order to get delivered.  Adding filtering is
just one (or more) additional pipe in the chain.
